Sushi Oono’s chef has a calm precision that’s hypnotic to watch, pairing classic Edomae techniques with subtle creative twists. Each course feels intentional, without overshadowing the purity of the ingredients.

The seafood is undeniably fresh, with many items flown in directly from the Toyosu Market. I like the seasonal touches of sweet spring uni and autumn sanma (Pacific saury) that keep the menu exciting year-round.

The counter seat put us right in front of the action, so we got to watch every slice of the fish and every torch of the aburi up close. It’s a quiet, focused place that allows the food and the craft to take centre stage without gimmicky features.

I found the courses to flow naturally, from the lighter bites to the richer flavours. They ended with a clean, satisfying close, which made me feel neither too full nor gustatorily shortchanged. 

The only drawback I could find with this place is its limited seating, which makes last-minute bookings nearly impossible. Those seeking dramatic plating or showy presentations may also find it too understated.

I have had a lot of omakases locally and in Japan. Chef Ohno ranks amongst the best of the best. One of the legends in this business. It’s more than just a dinner – it’s a beautifully crafted experience. Designed with love and passion, delivered with finesse, perfection and professionalism. The balancing act from the first item to the last is just sublime. Also, huge shoutout to Chef Ohno’s wife for the fantastic and brilliant array of wine and Sake. Trust me, there will be a bottle for all palates. If Chef Ohno runs the food service, his wife drives the drinks service. A beautiful marriage indeed – literally and figuratively.

From the first bite of the sashimi, I was blown away by its quality

I came here with very high expectations. From the first bite of the sashimi, I was blown away by its quality. Clean tasting, Firm bite. I felt the shari at Oono was slightly lacking in flavour. Maybe I prefer more strongly vinegared rice, I felt that the distinct fragrance and bite of the vinegar was much more subtle here. However, during the $450 omakase, I had some very very good pieces. The ankimo here is to die for, the otoro & nodoguro are all very good. Their abalone is tender too. I felt that the uni sushi and desserts could have been better. Their melon wasn’t the best I’ve had in Sushiyas in SG and was quite a disappointing end to an otherwise good meal. Given the price tag, though, I wish I could have had more mind-blowing pieces.

My friends and I loved watching the Ginza Sushi Ichi chef’s precise knife work with every course, with an obviously deep respect for the classic Edomae style. The Michelin-starred omakase he delivered to us felt both disciplined and confidently rooted in Tokyo traditions.

We were told the peak freshness and quality were due to the seafood being flown in from Tokyo, with seasonal items like sweet baby squid in the spring, and fatty tuna in the winter to keep the menu dynamic.

Admittedly, the interaction with the chef was kept minimal despite the intimate seating, but we found we didn’t mind at all. It felt intentional to keep the focus on the food, and we were allowed a front-row seat to observe every delicate movement.

The courses progressed logically, starting with lighter sashimi before moving to richer nigiri and ending with a clean finish. I’ve been to Ginza Sushi Ichi a couple of times, and have had a tamago and a delicate matcha dessert to finish, which were both delicious.

The only downside I see is the formal atmosphere, which may feel stiff for those seeking a more relaxed, “chattier” omakase. Those who prefer a broader range beyond raw seafood might also be disappointed with the limited variety in cooked dishes.

Ginza Sushi Ichi truly deserves its Michelin star. Food and ambience were top notch, while the Japanese sushi chef put on an amazing display of professionalism in his sushi presentation. The Omakase set with its wide variety of imported seafood, will delight all sushi lovers! My favourite is the soft shell crab eaten whole in one morsel. Yummy!

Speaking of, the ingredients are sourced straight from Japan, so everything tastes fresh.

The chef engaged us in light but lively conversation as he worked. It was both an intimate and fun experience, without taking away from the craftsmanship.

We did find pricing on the premium side, but it matched the quality and detail in each dish. Plus, the courses were well-paced, moving from delicate starters to richer nigiri, and ending with a light but delicious dessert.

However, those seeking a completely quiet, formal atmosphere might find this place too casual. Compared to similar-tier omakase spots, this one also has a slightly higher price point.

At Wakuda, every plate we had reflected a strong command of the chef’s technique and balance. He displayed a touch of modern flair with precision, which was a joy to watch, and resulted in dishes that felt both familiar and inventive.

Seasonal highlights included fatty tuna, uni, and even fresh wasabi flown in from Japan (oh, the difference in taste from the usual tubed version)! We could taste how the seafood and produce were sourced with care and allowed to shine without embellishment.

The meal flowed from subtle, delicate flavours to bold, satisfying bites. We had a delicate fruit course to finish, though others have told us about seasonal sorbets on certain days, as well.

As for the ambience, the dining room combines counter seating with an elegant, contemporary setting. There’s a sense of occasion in this place, which makes it an ideal setting for special celebrations.

The only downside I see at Wakuda is its higher cost compared to other omakase places of the same range. It’s also more formal, which might not sit well with those preferring a livelier experience.

Oysters were exceptional

Cool, modern, sensory dining experience! We made a reservation for our anniversary celebration and were greeted with a cheerful host at the reception. Some of our recommendations: Oysters were exceptional, tuna on toast and the stone cake. Paired with Katsuyama Ken sake which has a slight sweetness. Staff were friendly and also happy to assist in taking photos at both the bar area and the Omakase area, where a beautiful red tree sits in the background. Will defo be back to try its other dishes. Shout out to Nazel and Lily for their great customer service!

The small, creative touches that Sushi Masa’s chef delivered made each omakase course distinctive. He did so with both seasoning and plating, with a confidence rooted in traditional Japanese techniques.

Premium catches like otoro, botan ebi, and seasonal shellfish are carefully sourced and served at peak freshness that we can see and taste. We love that the natural flavours were allowed to speak for themselves.

We also enjoyed the counter seating with a clear view of the chef’s craft, making it both personal and engaging. It’s a focused dining experience in a calm, understated setting that’s great for intimate dates.

It’s an art watching the chef handle the food

A very enjoyable and satisfying omakase was served by the chef and his crew. The menu is distinguished, unique and generous. I can sense the generosity with the portion, higher grade quality of food, and it’s all well prepared before the session. Chef is engaging, humorous and a performer. It’s an art watching a chef handle the food, guests and equipment in a cosy, optimised setting. Limited seats, and you need to pre-book them a few days in advance. I forgot we had 16-18 dishes over 2.5-3 hours. Very enjoyable time spent.

One of the best sushi you will ever taste in Singapore

My wife and I had a truly fabulous experience dining here! We were celebrating our anniversary, and the chef had prepared cake and a card for us, with a photo taken of us on the spot. Most importantly, the Omakase specialises in Sushi, and if you are a sushi lover, you will be in for a delight! Exotic and one of the best sushi you will ever taste in Singapore! This is our first Omakase fine dining experience, and thanks for making it memorable for us!
